One Pot Chicken Stew

This One-Pot Chicken Stew recipe is the ultimate comfort food that will warm your soul and impress your taste buds. Ingredients:

  • High Heat
  • 2 Tbsp cooking oil
  • Rotisserie Chicken
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 2 Tbsp butter
  • 1 inch ginger (Julienne)
  • 5 cloves minced garlic
  • 1 large onion cubed
  • 3 medium size carrots
  • 1/4 tsp thyme
  • 1/4 tsp rosemary
  • 2 bay leaf
  • 3 Tbsp all-purpose flour
  • 1 liter chicken stock
  • 1/4 kg diced potatoes
  • 1 cup frozen peas
  • 2 Tbsp chopped coriander

Instruction:

At high heat in a pot, add oil and chicken. Season with salt and pepper.

Take out the chicken and set aside. On medium heat in the same pan add butter, ginger, garlic, carrots and onions. Saute till tender.

Add thyme, rosemary, bay leaf to vegetables. Add flour then add chicken stock a little at a time till a gravy starts to form.

Add potatoes, peas and coriander. Close lid and let it simmer till all the vegetables are done.
